Easy Crock Pot BBQ Barbecue Pulled Chicken Recipe
By nycgrl
To start this is what you will need:
1 crock pot or slow cooker (see below the one I have which you can purchase on Amazon.com)
3-5 boneless, skinless chicken breasts (Perdue is my favorite choice and you can get this one at any supermarket)
1 large onion (red or white whichever is your favorite, I have used both with similar results)
1 bottle of your favorite barbecue sauce (my personal favorite is Kraft's Original Barbecue Sauce)
You will also need patience as this is a meal that will take 4 hours to cook...remember its a SLOW COOKER.
Once you have all your tools and ingredients assembled we can begin!
To start, plug in your crock pot and set it to high. Be mindful to have exactly 4 hours to let the chicken cook. If you want to have this for dinner begin the process around 2pm or 3pm so it's ready by 6pm or 7pm.
(You can also cook for 7-8 hours by setting the crock pot on low. Some people like to leave it on all day and go to work. I do not recommend this as it is an electronic equipment and personally don't like to be away from the house leaving something like that on. Plus who wants to wait 7-8 hours?)
Cut the chicken breasts into halves and dump into crock pot (one piece of advice is to use a slow cooker liner. That way there is no crock put to wash, once you are done cooking you throw the bag away. Its perfectly safe and I use it every time I make this. Reynolds makes a great one and if you click on my link you will see they offer you $1 off coupon)
Now chop up your onion and throw that on top of the chicken.
Next take your barbeque sauce and dump the entire bottle onto the chicken and onions. Yes the entire bottle. It may seem like a lot but trust me the chicken will soak it up like nothing.
Take a large spoon and mix it all up.
Leave cooking for 4 hours in crock pot.
Once the 4 hours are up, take out chicken pieces and "pull" with two forks.
You can then put it on a toasted roll, add a bit more barbecue sauce to it, and serve it as a sandwich! Some yummy sides are mac & cheese or mashed potatoes.
That's it, super easy and it comes out super yummy. Depending on how many chicken breasts you cooked this could easily serve a family of 4 or 5 and still have some chicken leftover for lunch to take to work or school.
Enjoy!
